A traditional non-centrifugal cane sugar which is mostly consumed in Asia, Africa and some parts of America. Jaggery is a concentrated product of cane juice or it can even be from a Date or Palm Sap. It can vary form golden brown to dark dark brown if the molasses and crystals are not separated. Jaggery contains 50% sucrose, up to 20% invert sugars, and up too 20% moisture with the remaining made of other insoluble materials like wood ash, proteins and fibers. In countries like India, Pakistan, Bangladesh, Nepal, Sri Lanka etc Jaggery is used as an ingredient in sweet and savoury dishes in cuisines.
